Caviar built its name on curation — a shorter, choosier list than the everything-apps, aimed at restaurants worth going out of your way for. DoorDash bought it in 2019, and it has run on DoorDash's delivery network ever since.
A taqueria in a trailer on Rosman Highway does not really need a curator to vouch for it. The menu board on the side of the truck does that job, and so does the line at lunchtime.

The Part Nobody Shows You
Where your money actually goes
- Up to 30% Commission, paid by the restaurant. Published partner plans on the major delivery apps run in tiers, and the highest ones reach roughly 30% of the order total.
- ~3% Card processing, paid by the restaurant. Charged on top of the commission, on the full amount of the order.
- ~15% Service and delivery fees, paid by you. Added at checkout, separately from anything the restaurant is charged — and before the tip.
Counted together across both sides, something close to half the value of an order can end up going somewhere other than the kitchen that cooked it.

The Alternative
Order straight from the truck
When you order direct from Taqueria El Güero there is no marketplace commission and no restaurant-side cut. You pay a small online ordering fee, and that is the end of it.
That is the whole reason our online prices are the same ones you would pay standing at the window on Rosman Highway. Nothing is padded to absorb a commission, because there is no commission to absorb.
It also means your money stays in Brevard. It pays the people working the flat top, it buys from the suppliers we use, and it keeps a small local business running — rather than being routed to a platform headquartered a long way from Transylvania County.
